ISO: Gina, re: Nelson's black beans

Hi Gina. I am a busy mom with 2 beautiful boys (3 1/2 years and 6 months), and a part-time teacher. I have been enjoying the menus that you have been posting as they are delicious, and they eliminate the need for me to take lots of time out of my already busy schedule to figure out what to make for dinner!!

I tried making the Nelson's black beans, but unfortunately I do not have a pressure cooker and they did not turn out very well. Despite the fact that I cooked them much longer than the recipe called for, they were still not completely cooked. Do you think it would be Ok to substitute canned black beans? If so, then do you think I should adjust the recipe in any way? Your suggestions would be appreciated!
