ISO: Mexican Wedding Cake question
Misc.ADVERTISEMENT
Betsy,
This is the recipe: I am thinking I should have used the regular pineapple instead of the one in heavy syrup..Too much sugar? I did not pay attention to the first can I bought, so I am thinking it was crushed pineapple in juice NOT syrup.
MEXICAN WEDDING CAKE
2 eggs, beaten
2 cups sugar
2 cups flour
1 tsp. baking soda
1 (20 oz.) can crushed pineapple with juice
1 cup walnuts, chopped (I just used some chopped pecans and sprinkled on top of frosting)
Combine and bake in 13 x 9-inch pan, greased and floured, at 350 degrees F for 25 to 30 minutes. Great with cream cheese frosting.
CREAM CHEESE FROSTING (I used can cream cheese frosting)
1 stick butter, softened
1 (3 oz.) pkg. cream cheese, softened
2 cups confectioners' sugar
Vanilla
Beat until smooth.
