Good Morning. Yes you can subs. pecorino cheese for the parmesan cheese. There are a few secrets in this recipe however, one is melt the cheese & mix it in the concoction by inserting it thru a strainer to get smoothness in your sauce. There are other techniques but this should help you. Good luck with your dinner party & have a nice day.
