ISO: String Beans with Salt Pork (Fatback)

Help, you wonderful southern cooks!

I have string beans that I want to do the old southern way, with fatback (Don't worry, DH doesn't like string beans, so his heart won't have to tolerate the saturated fats).

Can anyone tell me how to do it - I have salt pork - is that what is used?
