Recipe(tried): String Beans with Salt Pork (Fatback)

The above recipe given for June in FL is correct except for one small detail. No old time southern cook would ever let a vegetable out of a pot until it had been cooked for half a day or maybe 30 minutes in a pressure cooker. The result should be a green bean that has changed color and really taken on the flavor of the pork.
I'd never seen a crisp vegetable till I went to college.
