ISO: thamees, an arabic flat bread that sounds like that
Misc.While working in Sahdi Arabia for several years my wife and I were hooked on a flat bread that was available on practically every street corner.
It was cooked by sticking it on the inside of a fired stone oven. It was a yeasted bread I believe as it was usually knocked down before flattenning and baking for a couple of minutes only. It was called tamis, thammees, or something phonetically similar and was usually cooked by indians or pakistanis so there is also a chance it may be from the indian sub continent.
Any information on how to reproduce this bread would be gladly received.
