Dear Vickie,

Thank you for posting. I'm sorry to hear that you had a problem with the Ciabatta recipe. I haven't tried the recipe but in comparison to others it looks like the ratio of liquid to flour is correct. Ciabatta dough is a wet dough and can be a little tricky to work with. If you'd like to give it another try here is a recipe we have from the King Arthur Flour cookbook: Ciabatta (click here). The KAF recipe mentions that an electric mixer should be used for it so that may be the key. Also, if you do a search of our site for Ciabatta with the Recipe(tried) option selected you'll find tried and true recipes for this that our visitors have shared. Please let us know if you try another recipe and how it works out for you.

Are you sure about the liquid ingred? I tried this recipe this weekend and it was awful. It was too wet. There was no way I could shape it into loaves. I poured it onto the cookie sheet. I tried adding more flour but it was a complete mess.

Thanks,

Vickie, Omaha
