ISO: Wedding Cake Question

I am curious as to what type of cake is made for wedding cakes, structural type cakes. Such as Food TV's Ace of Cakes or the Food Network Challenges. They focus so much on the looks of the cake, the frosting all the decorations, but what type cake is BAKED AND I would love the recipe. It looks so firm and dense, that is just what I'm looking for. HELP!! Is it a sponge cake, or what? I'm hoping someone in the baking business can help me.
