I love pork tenderloin and the garlic inside sounds great! Thank you for posting.
I have another secret that helps prevent drying inside. A friend of the family owns a restaurant on the Outer Banks in North Caroline, called the Rundown. He is a self taught chef and shared his method of cooking pork tenderloin. After it is prepared for cooking, he rolls it in sugar. As it bakes the sugar creates a caramelized crust that holds in moisture. It works very well and tastes wonderful.
