Misc.but I use my caramel for FLAN (Spanish custard) & also, in the style of the islands, when I begin cooking a veal or kid fricasse, I burn a tb of sugar with a little bit of water in the bottom of the pot, & then I add the other ingredients. It provides a delicious flavor & color to the resulting dish. Thanks again for letting me know.
