Thank You: Thanks for your comments DA. My advice is that you look for
Misc.authentic chorizos in the Spanish, Cuban or Latin markets. There is also a delightful chorizo recipe in one of Penelope Casas books. I think it is in the Foods & Wines of Spain. Chorizo is a cured meat with spices & seasonings. It is as good or better than cured hams or linguica or longaniza. If you are interested in the recipe I will gladly copy it for you.
