10x sugar

10x is the finest powdered sugar the sugar is graded by the sifter used or the number of times the sugar has been sifted...not sure which one.
the courser is powdered sugar is usually 3x...
oh and another interesting sugar fact. Cane sugar is more pure than beet sugar and will be less likely to crystalize when cooking. thats why candy recipes always call for cane sugar. A famous pastry chef told me always use products that are grown above the ground they will always be purer.
Powdered sugar also has about 3 percent corn starch to prevent caking...this also helps as a thickening agent when heated..like in poured fondant icing....and why icing that is overheated gets hard as a rock...
their is a commercial grade of powdered sugar that has much more cornstarch it is called doughnut sugar and it will not absorb moisture like regular powdered sugar...which is why it is used on doughnuts and cream puffs ect. it won't melt off in the refrigerator.
