Company Mashed potatoes
Misc.Hi Susan, This is a recipe we use for large dinners. It is rich as it is loaded
with sour cream and cream cheese. It is not for 50 though, you'll have to
increase the amounts yourself. It can easily be prepared ahead and reheated
when needed.
5lb. potatoes, pared and quartered, around 9 large
2(3oz.)pkg. cream cheese
1c. dairy sour cream
2 tsp. onion salt
1/4 tsp. pepper (I use white pepper)
2Tbs. butter or margarine
Cook the potatoes in boiling salted water until tender, drain well. Mash until
smooth with potato masher. Add cream cheese, sour cream, onion salt, pepper,
and butter. Beat with potato masher until smooth and fluffy. Can be served
now, or they can be stored in refrigerator until needed. To reheat, place
desired amount in a greased casserole. Dot with butter and bake in 350 degree
oven 30 minutes or until heated through. Makes 8 cups.
