Dearest June: If I could say, the Maine lobsters are sweeter

& with a lighter taste than their hot water cousins. In regard to the texture, I would say that our lobsters are denser & less convenient for a lobster salad, but great for the superior flavor that they impart. I am going to make a comparison & I am not sure it is the proper one: Our spiny lobster can be compared in flavor & texture to the "dark" meat of the chicken, Maine lobsters are like a tender chicken breast.

If you are planning on serving a Paella, a Zarzuela, an Asopao or a Boullabaisse (Cioppino), I would prefer a Spiny Lobster. For a Salad or Grilled, I would prefer a Maine lobster. BOTH ARE EXCELLENT!!!!!
