Recipe: Florida Shrimp Salad with Zesty Tomato Dressing

FLORIDA SHRIMP SALAD

2 dozen shrimp, shelled, deveined
ZESTY TOMATO DRESSING:
1 cup balsamic vinegar
1 teaspoon minced garlic
1 cup fresh lemon juice
1/2 teaspoon seasoned salt
1 cup extra-virgin olive oil
1 cup diced tomatoes
1 small jalapeno, minced
1 cup ripe olives, sliced
TO SERVE:
Assorted salad greens
Chopped parsley

Grill or broil shrimp as desired.

PREPARE DRESSING:
Mix vinegar, garlic, lemon juice, salt, olive oil and tomatoes. Stir in jalape o and olives. Mix well.

Toss with shrimp and serve over a bed of greens. Garnish with parsley.
