Hearts of Palm - oh, yummy - one thing to look forward to back in FL!

Nancy - this looks like a wonderful salad - I have saved it to my recipe folder.

I didn't know what hearts of palm was(were?) until moving to FL - we have a large farm produce market near us that features these huge stalks of "skunk cabbage" which I was told were where hearts of palm came from. I've never had the nerve to buy these monsters, and I'm sure I haven't lived long enough in FL to qualify as a southern cook yet, but I adore hearts of palm - I could just open a jar or can and eat them as is, the whole thing by myself!
