Jackie - Florida lobster!

Florida lobsters are also called spiny lobsters - different breed from our beloved cold Atlantic lobsters - they don't have claws, and they have a spiny shell. Those of us transplanted northerners, who are used to the delicious cold water Mass/Me lobsters wouldn't be caught dead eating one of those mutant crayfish, but down there, they're considered a delicacy and used in the same way in recipes.

In the stores, you only see them sold as tails. They aren't swimming around in tanks like up here. They are already killed and harvested for only the tails which you see in the deli/fish sections of supermarkets.

Some day I'll try one, but I'm too spoiled right now!
