Filipino Adobo and Likely Hispanic Influence
Misc. Actually, "pure" (i.e., indigenous native) Filipinos are quite rare (as far as I understand). Over the centuries, the racial and cultural mix has been such that today most Filipinos have spanish, asian, and black heritage, which extends to their cuisine. In my opinion, this is what makes Filipino food so interesting -- and decidedly unique (can you say "Spanish-Chinese Soul Food"? ). I must admit, I am quite "addicted" to the stuff -- although a lot of it is probably a cardiologist's nightmare! :-)
