Thank you all for your nice notes....

The bakery supplier in NYC is New York Cake and Baking, 56 West 22nd st, NYS, 212-675-CAKE, www.nycake.com. They have all sorts of professional pans. To get a puffy look in a muffin, they can help you with the proper pan. I would also ask the restaurant how they bake them--- I have found that people can be really helpful if you just ask.

Many people bake muffins in pots, but I always find that mine stick like crazy. A pot is porous. I prefer to use the jumbo muffin pans. They also probably overfill the muffin tin (fill almost to the top) and sometimes use lots of leavening to get the tall puff.
