Lemon Luscious is great! I have served it twice, for company & everybody loved it. Both times I used 1/3-less-fat cream cheese & fat-free Cool Whip, & it turned out great. The recipe doesn't give the amt of Cool Whip, but I used the 8 oz container, & it was fine. The first time I made this I sprinkled a few leftover flour/marg/pecan crumbs on the top; the 2nd time I made it I sprinkled a few coconut flakes on the top. Both, with good results. These two methods helped to camouflage my knife strokes in the top layer of Cool Whip. By the way, has anyone tried this recipe with any other flavors of pudding? Butterscotch or chocolate, perhaps? or Lime, maybe? Anyway, thanks for sharing this recipe.
