So sorry you have to go away under these circumstances. I would suggest, in addition to the other excellent ideas, getting a couple of bags of the boneless, skinless individually frozen chicken breasts, breading and frying them, then refreezing them with instructions. You can also pan fry a couple in BBQ sauce, cook some rice to go along with them, and have that as a meal. A couple of easy stir frys, individually portioned, would reheat well, too. Throw in some pizza and those banquet pot pies, my husband could live on those alone for a month. Some of the chunky soups over precooked rice or noodles would be easier for you to have on hand. You know he won't starve, no matter what you leave!! Make sure you show him how to use the washer and dryer, he's bound to run out of something!
