Recipe(tried): Re: ISO Make ahead freezer meals

Cathy: First, I want to say that I, too, will be remembering your whole family in prayer. We just lost a family member to pancreatic cancer in March, and the prayer support of friends was invaluable. Keep remembering that you and your mom are not alone!

As for freezable recipes, I have one to add:

Chicken Veg-All Casserole

3 1-pound cans Veg-All, drained
1 can water chestnuts, chopped
1 cup onion, chopped and sauteed
2 cups chicken, cooked and chopped
1 cup mayonnaise
1 cup extra sharp cheese, grated
1 can cream of celery soup
2 cups crushed Cheez-Its
1/4 cup melted butter or margarine

Preheat oven to 350 degrees. Gently toss Veg-All, water chestnuts, onion, and chicken until mixed. Mix together mayonnaise, cheese, and soup. Combine with Veg-All mixture. Spread in greased 2-quart rectangular casserole. Sprinkle with Cheez-Its and drizzle with melted butter. Bake 20-25 minutes or until bubbly hot.

May be rpepared ahead of time and refrigerated or frozen. Thaw before cooking, if frozen. Put crumbs on top just before baking.
