So sorry to hear about your Mother, I will keep you both in my thoughts and prayers.
Some of the things I have frozen for my Hubby when I had to be away are: Spaghetti and meatballs, already sauced and ready to heat. Roast beef and gravy. Macaroni and Cheese. Fried chicken. Chicken and rice casserole. Roast pork with barbecue sauce. Turkey and stuffing with gravy. Swiss Steak, Salisbury Steak, Chicken Pot Pie. Meatloaf.

A few years ago, I went to Florida when my daughter-in-law had her second child, I made some of these things for Jim to eat while I was gone. I also made some before I left Florida and froze them for later use. In both instances, I labeled them and wrote out instructions for cooking or reheating and taped that to the foil or ziploc or whatever packaging I used.
Stock up on canned veggies, he can open those and heat in micro to go with any meal. Baked potatoes can be done in the micro.
I have also made brownies, pies, cookies, cheesecake, when they are cool make individual portions, freeze on cookie sheets and then put them in ziplocks or tupperware containers.
