I am so very sorry about your mom. Having done an internship in an oncology practice, I can tell you that cancer isn't the "hopeless" diagnosis it used to be. Reference freeze-heat-n-eat meals, I make lasagna (sorry, the recipe has no measurements and i don't want to subject you to the trauma my mom did by saying "some of this" and "some of that") and I put it in loaf pans and freeze them. That way, hubby and I don't have to eat a ton of the stuff when we have a taste for it. Hope it helps.
