Recipe: Fried Danish Cookies

Desserts - Cookies, Brownies, Bars

David, I have a Danish cookbook and looked for the name of your recipe--didn't find it with a name resembling yours, but did find a roll-out cookie that is fried and dusted with powdered sugar. Here's the recipe--hope it's similar to what you're looking for. I have other international cookbooks and will do a search later to see if I find another. But since you're "desperate" I'll post this one now. Kar

Fattigmandskager (English title--Poor Man's Cookies)

3 TBSP. light cream
1/4 c. sugar
3 eggs, beaten until light
1 1/2 TBSP. melted butter
1 TBSP. brandy
1/2 tsp. salt
1/2 tsp. cardamon
3 c.flour

Fat or oil for frying
Powdered sugar

Blend cream and sugar well. Add eggs, butter, brandy, salt, cardamon and 2 cups of the flour, mixing well. Add enough more flour to make a stiff dough. Chill 1 hour.
Heat oil to a depth of 3 inches in a deep pan to a temperature of 365 .
On a lightly floured board, roll half of the dough paper-thin. Cut into diamond shapes 3 inches long, making a slit in the center of each. Pull one corner through the slit. Cook in the hot fat until a delicate drown. Dust with powdered sugar. Roll out remaining dough and proceed as above.
