Recipe: Croquignoles (doughnut twists)

CROQUIGNOLES

1/3 cup butter
1 cup sugar
4 eggs
1 tsp. vanilla
4 cups flour
4 tsp. baking powder
1 tsp salt
1/4 tsp. ground nutmeg
1/2 cup light cream
Icing sugar (for dusting)

Cream butter and sugar. Beat in eggs, one at a time. Add vanilla.

Sift dry ingredients together. Stir into egg mixture alternately with cream. Chill at least 3 hours.

Working with a quarter of the dough at a time, roll to 1/4-inch thickness. Cut in 1/2-inch strips 7-inches long. Twist each strip, fold in half and pinch ends together.

Fry in deep fat (375 degrees F) until golden brown. Drain on paper. Dust with icing sugar if desired.

Makes 3 to 4 dozen
