Recipe: Rare Roast Beef with Horseradish Cream

RARE ROAST BEEF WITH HORSERADISH CREAM

FOR THE HORSERADISH CREAM:
12 slices of a baguette
Olive oil for brushing
1/4 cup sour cream
2 teaspoons horseradish cream
FOR SERVING:
Watercress sprigs
8 ounces finely sliced rare roast beef

Brush bread with a little of the oil and toast in oven until golden and crisp on both sides.

Mix sour cream and horseradish cream.

To serve, place sprigs of watercress, a slice of beef and a dollop of the sour cream mixture on toasted bread slices.

Makes 6 to 12 servings
