Recipe: Grilled Bayside Tuna with Ginger Mango Salsa (using tequila, lime and Old Bay seasoning)

GRILLED BAYSIDE TUNA WITH GINGER MANGO SALSA

"An effortless marinade infuses the tuna with the flavors of lime, cilantro, Old Bay Seasoning and Tequila. The grilled tuna is complemented by a zesty salsa of ripe mangoes, oranges and sweet onion accented with ginger, cumin, red pepper and Old Bay."

2 pounds fresh tuna
FOR THE MARINADE:
1 tablespoon Old Bay Seasoning
1/4 cup olive oil
1/4 cup Tequila
1/4 cup lime juice
1/2 teaspoon chopped fresh cilantro

FOR THE GINGER MANGO SALSA:
2 cups diced fresh mangoes
1 tablespoon orange zest
1 orange, peeled, sectioned and chopped
1 tablespoon chopped Vidalia or red onion
2 tablespoons chopped fresh cilantro
1/2 teaspoon McCormick Ground Ginger
1/4 teaspoon McCormick Ground Cumin
1/4 teaspoon Old Bay Seasoning
1/8 teaspoon McCormick Ground Red Pepper (cayenne)

Add 1 tablespoon Old Bay with olive oil, Tequila, lime juice and 1/2 teaspoon cilantro to plastic bag. Mix gently. Place tuna in plastic bag; turn to coat. Refrigerate 20-30 minutes.

While tuna is marinating, combine salsa ingredients. Stir gently to mix well.

Grill or broil tuna 5 minutes per side. Baste once with leftover marinade after turning.

Serve salsa over tuna.

VARIATION:
Tuna may be substituted with halibut, swordfish or mahi mahi

Makes 4 servings
