I hope you will like this recipe for oven-baked beef stew. Its my husband's favorite and so easy to make. I got the recipe from my sister-in-law, after walking into her kitchen and asking, "What smells so heavenly"? Its a good old fashioned, hearty beef stew with brown gravy...good with hot buttered biscuits or rolls. ENJOY!
Alisha's Oven Beef Stew
1 lb.(or more) beef stew meat, cubed
1 medium onion, sliced
1 rib celery, with leaves, sliced
3-4 medium potatoes, pared and cubed
3-4 medium carrots, scraped and sliced
Salt and pepper to taste
2 teaspoons beef bouillon base (dry)
1/3 to 1/2 cup all-purpose flour
Water
Brown the beef cubes in a small amount of oil. Using a slotted spoon, remove and place in a large, deep greased casserole or pan ( I use a small roaster).
Layer vegetables in order given and sprinkle the beef bouillon base, salt (sparingly) and pepper over all. Sprinkle flour over all and add enough water to cover everything. (The flour will not look dissolved at first, but after baking it will be a beautiful rich gravy.) Cover with a lid or foil and bake at 350 F. for about 1 1/2 hours, when vegetables and meat are tender and gravy has formed.
Stir once after about 35 minutes of baking. Serve with hot buttered biscuits, cornbread or rolls. (Serves 6 or more) Quick, easy and smells heavenly while cooking...tastes just as good too!
