Applesauce Quick Bread with Pecan Streusel
Streusel;
1/4 cup + 2 tablespoons unsifted flour
1/4 cup chopped pecans
3 tablespoons granulated sugar
1/4 teaspoon cinnamon
3 tablespoons butter
Batter;
1 2/3 cups unsifted flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon salt
1/2 cup light brown sugar
1 large egg
1/2 cup applesauce
1/4 cup milk (whole or low-fat)
1/4 cup apple juice
5 tablespoons unsalted butter, melted
Adjust rack in lower third of oven; preheat oven to 350 degrees. Grease and flour a 9x5x3-inch baking pan.
For the Streusel:
Combine the flour, pecans, sugar and cinnamon in a mixing bowl. Using your fingertips or a pastry blender, cut in the butter until the mixture forms small lumps; set aside.
For the Quick Bread:
Sift the flour, baking powder, baking soda, cinnamon, ginger, cloves and salt into a large bowl. Add the brown sugar and stir to blend.
Mix together the egg, applesauce, milk and apple juice in a small bowl.
Make a well in the center of the dry ingredients and pour in the egg mixture, then the melted butter. Without overmixing, stir the egg mixture and butter into the dry ingredients until just moistened. Spoon the batter into the baking pan.
Bake about 45 minutes, or until the bread is golden and a wooden toothpick inserted into the center comes out clean (streusel is not as golden as the bread). Remove from oven and let cool in the pan for 10 minutes before removing to a wire rack. Let cool completely before slicing.
