APRICOT-MUSTARD GRILLED TENDERLOIN
1 pork tenderloin, about 1 pound, trimmed
Salt and pepper
3 tablespoons apricot preserves
5 tablespoons honey mustard (or any brown mustard)
Heat grill. Season tenderloin with salt and pepper. Stir together the preserves and mustard.
Grill pork over a medium-hot fire, turning frequently, about 10 minutes. Move pork to area of grill with lower heat and baste with mustard mixture, turning frequently, for about 5 more minutes, or until a meat thermometer inserted in the center registers 160 degrees (medium).
