Recipe: Baked Kibbee

BAKED KIBBEE

2 lb raw kibbee, divided use
MEAT FILLING:
1/4 cup pine nuts
butter
1/2 cup chopped onion
1 lb. beef or lamb, coarsely ground
1 pinch cinnamon
4 tbsp olive oil, divided use
TO SERVE:
plain yogurt

Pour 2 Tbsp. olive oil in bottom of 9x13 in pan. Divide raw kibbee in half and press half into pan; set aside.

MEAT FILLING:
Brown pine nuts in butter. Add onions until translucent; set aside.

Brown meat with pinch of cinnamon. Combine with pine nuts and onions. Spread over kibbee in pan and press other half of kibbee on top. Spread remaining olive oil on top.

Just before kibbee is ready to go into oven, score the top layer (about 1/2 inch deep) into 2 inch squares.

Bake until deep brown at 375 degrees.

Serve with plain yogurt.
