Recipe: Baked Scrambled Eggs

This is a repost that was by Ellen in Feb. 1998.

Oven Scrambled Eggs

2 c. butter, melted
100 eggs, beaten
3 T. salt
2 1/2 quarts milk

Divide butter among four 9x13 glass baking dishes. Combine eggs and salt and mix well. Gradually stir in milk. Pour evenly into baking dishes. Bake uncovered at 350 degrees for 10 minutes. Stir and bake 10-15 minutes more or until eggs are set. Serve immediately.

This recipe is supposed to serve 100 people (actually probably less). I would suggest preparing one pan at a time over the course of an hour or so, so they would always be fresh and hot.
