CAULIFLOWER "MASHED POTATOES"
2 packages (10 ounce each) frozen cauliflower (or fresh - same amount)
1 teaspoon bouillon granules (low sodium variety)
1/8 teaspoon black pepper (or more to taste)
1 tablespoon minced onion flakes (can omit)
1 teaspoon butter
2 tablespoons cream (approximately- add slowly)
paprika (optional)
Preheat oven to 375 degrees. Coat a 1 1/2 quart baking dish with cooking spray.
Cook cauliflower until well done; drain.
Put cauliflower, bouillon, pepper, onion flakes, and butter in a food processor. Process until well blended. Add cream as necessary, a LITTLE AT A TIME, to desired consistency (leave some lumps if you like!) You can also use a blender to puree but a food processor is much easier.
Place cauliflower mixture in prepared dish. Sprinkle with paprika if you like.
Bake for at least 20 minutes or until hot.
