Basic Carbonara

Basic carbonara is 1 egg (raw) and 1/4 lb. pasta (cooked and hot!) per person. You mix the raw egg with the hot pasta, throw in some cooked bacon or chopped leftover ham and mix with a handful of good quality Parmesan or Romano cheese. The heat of the pasta cooks the egg to a thick sauce-like consistency, so you want to be sure the pasta is hot, hot, hot!
A fancier version for 2 people takes the basic ingredients and adds.... cook in a little bacon fat: 1 small onion, chopped, 2 -3 cloves of garlic, minced. Mix into hot pasta with 1 small to medium fresh (raw) tomato, chopped and 1/4 cup of cilantro, chopped.
