Western Meal In One

1 lb. ground beef
1 Tbsp. vegetable oil
1 clove garlic
1/2 cup chopped onion
1/2 cup chopped green pepper
1 tsp. salt
1 tsp. chili powder
1 can (16 oz.) red beans, drained
2 1/2 cups tomatoes with juice, chopped
3/4 cup uncooked rice
3/4 cup grated cheddar cheese
1/4 cup sliced black olives

Brown beef in vegetable oil with garlic. Add the onion and green pepper; cook until onion is transparent. Drain off fat. In a 2 qt. casserole, combine the meat mixture, salt, chili powder, beans, tomatoes, and rice. Bake, covered, at 350F for 30 minutes. Uncover and sprinkle with cheese and olives; bake for 15 minutes. more. Makes 6 to 8 servings
