Recipe: Basic Crepes and Butter Crepes
Breakfast and Brunch Basic Crepes

1 1/4 cups flour
3 beaten eggs
2 tablespoons melted butter
1 1/2 cups milk
Blend all ingredients plus a pinch of salt. Let stand at least one hour before making crepes. Makes about 12.
Basic Crepes 2
2 eggs
1 cup flour
1 1/8 cups milk
2 tablespoons melted butter
Combine all ingredients plus 1/8 tsp salt. Blend one minute; scrape down and blend 15 seconds more. Refrigerate at least one hour before making crepes. Makes about 10.
Butter Crepes
4 eggs
2 cups flour
2 cups milk
1/2 cup melted butter
Combine everything, plus 1/4 tsp salt; blend for 1 minute. Scrape down sides,then blend for another 15 seconds. Refrigerate 1 hour. Makes about 20.
