Recipe: Blender Pancakes
Breakfast and Brunch Blender Pancakes

Makes 4 servings
1 egg
1 egg white
1 and 1/2 cups plain low-fat yogurt
3 Tbsp vegetable oil
1 cup all-purpose flour
1/4 cup sugar
1 and 1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 cup old-fashioned rolled oats
Combine the egg, egg white, yogurt and oil in blender; whirl until smooth. Add the flour, sugar, baking powder, baking soda and salt; whirl to blend. Add the oats; whirl briefly just to mix.
Heat a griddle or large skillet over medium heat. Lightly brush with vegetable oil. Spoon about 3 tablespoons batter for each pancake onto griddle. Cook until bubbles form on top, 2 to 3 minutes. Flip over; bake until browned, about 2 minutes. Keep warm until all pancakes are cooked.
Serve the pancakes with maple or fruit syrup.
