I haven't posted a recipe in a while because i've been so busy reading everyone else's recipes which are always so good! Anyway, since the weather is now getting colder i have been thinking about crispy roast potatoes.........ahhh!Not that there are many occasions when i'm NOT thinking of food, but there you go :)
I know everyone has their own way of doing these and almost didn't post this because of that, but i think that these are good enough to warrant it and i've found that this method produces the best roasties. The secret is very hot oil and shaking the potatoes......
Quantity and variety of potatoes to suit you
Par boil the potatoes for about 10 mins, drain well. Return the potatoes to the pan, put the lid on and shake fairly vigorously to 'roughen' the edges (not too much though, you don't want mash!) - this is one of the secrets to making your roasties nice and crispy. Heat some oil in a roasting pan on the hob. When hot but not smoking, add the potatoes (you can sprinkle witha little sea salt at this point which will make them even criper) then transfere to a hot oven for 30/40 mins or so, basting and turning occasionally. That's it! Serve with roasted meats, cold cuts and salad, whatever.
