Recipe(tried): Better Tasting & Improved Casserole - Chicken and Broccoli Casserole Supreme

I don't know if getting creative in the kitchen is some sort of therapy but it works for me!!
As I was making tonight's dinner, I did some changes to the casserole and it just would not be fair to keep the changes from you...so here is the better and improved Chicken and Broccoli Casserole. Well worth the trouble too!! What I did was brown the chicken well instead of pouching it, giving it more flavor. I didn't have the broccoli spears on hand so I used the 2 boxes of broccoli with cheese I had. And, instead of layering it, I mixed the whole darn thing together. Boy was it ever good!!!
Chicken and Broccoli Casserole Supreme
Serves 6
3 chicken breasts (season with McCormick's Montreal Chicken)
2 T. olive oil
2 pkgs. frozen broccoli & cheese, thawed
1 medium onion, chopped
3 garlic cloves, crushed
1 can mushroom soup
1 can cream of chicken soup
1 cup mayonnaise
1 tsp. lemon juice
1 tsp. curry
1 cup shredded sharp cheddar
1/2 cup seasoned breadcrumbs
1 small can water chestnuts, drained and chopped
Heat oil in large skillet and brown chicken well. Take chicken out, cut up into chunks and set aside. Meanwhile, in same skillet, saute onion til it begins to golden, then add garlic and cook 2 more minutes. Add the chicken and mix well. Combine soups, mayonnaise, onions, chicken, water chestnuts, broccoli with cheese sause, curry & lemon juice. Mix well and pour into a greased 8x13 glass baking dish. Sprinkle breadcrumbs evenly over. Then sprinkle the grated cheddar cheese all over the top. Cook for 30-45 minutes til nice and bubbly and cheese has melted.
