Recipe: Blueberry Buttermilk Muffins (using buttermilk and browned butter)

BLUEBERRY BUTTERMILK MUFFINS

2 1/2 cups flour
1 1/2 tsp baking powder
1/2 tsp baking soda
3/4 cup sugar
1/4 tsp salt
1 cup buttermilk
2 eggs, beaten
4 oz butter, melted and browned lightly
1 1/2 cups blueberries

Sift dry ingredients together in a large bowl.

In another bowl, whisk buttermilk, eggs and butter. Make a well in dry ingredients and pour in liquid ingredients, mixing quickly.

Fold in blueberries. Spoon batter into greased muffin cups.

Bake til golden brown. Bake at 400 degrees F for 20-30 minutes.

Makes 24 muffins
