ORANGE NUT BREAD
1 medium orange, rind and juice
boiling water
1 cup dates
1 egg, beaten
2 tbsp margarine, melted
1 tsp vanilla
2 cups flour
1 cup sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup nuts
Preheat oven to 350F. Grease a loaf pan.
Squeeze orange to remove juice. Place juice in measuring cup with boiling water to make 1 cup.
Put rind of orange and dates through food chopper.
Add diluted orange juice to date mixture. Stir in melted egg, margarine, and vanilla.
Sift flour together with sugar, baking powder, baking soda, and salt. Mix well. Stir in nuts. Pour into prepared loaf pan.
Bake for 1 hour at 350 degrees. Cool in pan before removing.
