Recipe: Bon Bons - Chocolate Covered Cherries (using mashed potatoes)

BON BONS - CHOCOLATE COVERED CHERRIES

3/4 cup very hot mashed potatoes
4 cups confectioners' sugar
4 cups chopped coconut
2 tbsp. margarine, softened
1 tsp. vanilla
80-85 maraschino cherries, drained
1 (12 oz) pkg semi-sweet chocolate chips, melted

Mix the hot mashed potatoes with confectioners' sugar, coconut, margarine, and vanilla. Chill in refrigerator until mixture is stiff.

Roll into balls with floured hands.

Place a drained maraschino cherry in middle of each.

Dip into 12 ounces chocolate chips that have been melted in double boiler.

Makes 80 to 85
