Recipe: Glazed Pineapple Yams (with raisins or dried cranberries)

GLAZED PINEAPPLE YAMS

1 (15 1/4 oz. or 20 oz.) can Del Monte Pineapple Chunks In Its Own Juice
1 1/2 lb. sweet potatoes or yams, peeled and cut into chunks
1/3 cup seedless raisins or dried cranberries
1/4 cup firmly packed brown sugar
3 Tbsp. butter or margarine, melted
1 tsp. ground cinnamon

Preheat oven to 375 degrees F.

Drain pineapple reserving 1/4 cup juice; set aside.

Combine reserved juice, sweet potatoes, raisins, sugar, butter and cinnamon in greased 9-inch square or 2-quart shallow baking dish.

Cover; bake at 375 degrees F for 35 minutes or until potatoes are tender.

Stir in pineapple; bake, uncovered, 5 minutes.
