Recipe(tried): Bourbon Sweet Potato Bread (WW points=5)

This has an unusual taste due to the bourbon, but it is very delicious and moist.

BOURBON SWEET POTATO BREAD

1 1/4 cups flour
1/2 cup light brown sugar
1/3 cup quick oats
1 Tbsp baking powder
1 tsp grated orange zest
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1 egg
1/2 cup buttermilk
1/2 skim milk
3 Tbsp butter, melted
5 Tbsp bourbon, divided use
1 cup mashed cooked sweet potatoes
1/2 cup raisins
FOR THE ICING:
1 cup confectioner's sugar

Preheat oven to 375 degrees F. Lightly spray a 4x8-inch loaf pan.

Whisk the dry ingredients together in a bowl.

In another bowl, whisk eggs till frothy. Add buttermilk, milk, butter and 2 tablespoons bourbon. Whisk in sweet potato mixture until blended. Add flour mixture and raisins. Stir to blend but do not overmix. Pour into prepared loaf pan.

Bake 1 hour or until loaf pulls away from sides. Cool.

To make the icing, whisk confectioner's sugar with remaining 3 tablespoons bourbon. Drizzle over warm loaf.

Makes 8 servings
