Brandied Yams

Yield: 8 servings
5 large sweet potatoes (about 4 1/4 lbs)
1/4 cup sugar
1/4 cup brandy or more to taste
3 tbsp butter or margarine, melted
1 tsp salt
1/2 tsp nutmeg
1/2 tsp ginger
1/8 tsp pepper
1 tbsp butter or margarine, melted
1 tbsp orange rind -- grated
orange slices for garnish
Oven 350F
Cook sweet potatoes in boiling water to cover 45 minutes or until tender; cool to touch. Peel and mash. Stir in sugar and next 6 ingredients; spoon mixture into a lightly greased 11x7x1 1/2-inch baking dish. Brush top with 1 tbsp. melted butter; sprinkle with orange rind. Bake at 350F for 25 to 30 minutes. Garnish if desired.
