Recipe(tried): Breakfast cassarole and other ideas

Breakfast and Brunch
We enjoy breakfast cassarole and it can be doctored to be very fancy or down home feel.

My ingredients are all approximate -- hard to mess this one up.

Tear bread up in a 9x13 dish, don't overpack the dish. For a lighter fancier dish cut off the crusts. The use of different breads is nice too -- but plain white bread is most common for us

I use a 2 qt. piture to mix up the liquid -- one that I can put a lid on and shake up or with a stirr plunger in it.

10-12 eggs
1 to 1.5 qts milk
1/2 stick softened butter
1 to 2 cups cheese (shreded yellow is fine or go fancier with some blends)
mix this all up and pour over the bread make sure all of the bread covered and is moistened -- in the corners too. If it seems not to cover well just pour a little milk over the middle of the pan and press it out to the sides.

Cover and refrigerate overnight.

Bake 2 hours at 325 untill puffy and golden. Sometimes I overfill my pan and it leaks over the edge and makes the oven smoke so now I just out of habit put a cookie sheet under pan before I bake -- i put a bit of water in the cookie sheet as well.

This can be done ahead and reheated for serving.

Nice with fruit.

I also add bacon pieces to it but I wanted you to have the BASIC recipe.

It has been know to be spiced up with hot sauce, and onions or mellowed out and sweetened with a bit of leftover pumpkin pie filling that did not fit in too small of a pie dish. Test it on your family and see what they might like you to add.

What type of a "feel" are you going for for this wedding?

10 am seems like a brunch kind of a thing .....

Orange juice or a mimosa for beverage

Sugared bacon bows (a search will find those posted before)

or there was a recipe once that had warmed bree -- with fruit as i recall -- I even recall making it, I do NOT like the "baked" bree you can find at costco.

What about a nice smooth tapioca -- I'm sure someone has a nice one here. add a few marchino cherries for a color pop.

Bread pudding is a hit -- always! there are several great recipes here -- I made one and put a kahula sauce over it -- don't know if I could remeber that one or not. But the point is bread pudding isn't just rasins and bread .... it can be WONDERFUL.

I have a fruit compote (warm dish) recipe if you are interested I will did it up and post but may take a few days for me to get back. It is not a "pretty" dish but tasty.

we had cucumber sandwhiches at my daughters shower -- I thought they would flop but suprizingly they were a hit! They might be nice for a reception too.

somthing salmon or pouched fish would be nice.
Or crepes! No limits on crepes or how they can be done -- and they can be done ahead too!

a tiered pastry tray would be elegant and nice - with little pastries on it then sprinkle dish and pastries with a bit of powdered sugar.

So please do tell the specifics on wedding -- how many, what type of feel, time of year, any kind of theme going on or color, in a home or at a hall, What is your role -- are you the bride, friend, mother -- that will determine the involvment level of the reception :-)
