Recipe: Broccoli with Red Pepper Sauce (onion sauteed in chicken broth) (food processor)

BROCCOLI WITH ROASTED RED PEPPER SAUCE

1 small onion, chopped
2 tbsp. chicken broth
1 (7 oz.) jar roasted red peppers in water, thoroughly rinsed and drained
1 tsp. balsamic vinegar
1/4 tsp. thyme
pepper to taste
cooked fresh broccoli

Saute onion in chicken broth until tender.

In food processor or blender, blend onion mixture with remaining ingredients until smooth. Heat through in saucepan, thinning with additional chicken broth if needed.

Serve with fresh cooked broccoli.
