Recipe(tried): Buffalo Style Chicken Cutlets

Ordinarilly I grill this, but since I am grill-less at the moment, I broiled it with great success.

Buffalo Style Cutlets

3 tablespoons vegetable oil
2 tablespoons tabasco sauce
1/2 teaspoon minced fresh garlic
pinch dried oregano
1 lb pkg chicken cutlets (or skinless boned thighs if u prefer dark)

Preheat broiler or grill. Line broiler pan with foil if preparing that way.

Whisk together all ingredients but chicken. Arrange chicken on broiler (grill) pan, brush with oil mixture, and broil about 5 min (10 min if using thighs) 4 - 6 inches from heat. Turn chicken over, brush with remaining oil mixture and broil another 5 minutes (or 10 if using thighs), until cooked thru.
