Buttery Scones
2 cups all-purpose flour
1/4 cup sugar
1/4 cup light brown sugar, packed
1 1/2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
6 tbsp. sweet butter, chilled and cut into small squares
1/2 cup buttermilk, room temperature
1 large egg, room temperature, lightly beaten
2 tsp. vanilla
Preheat oven to 350 degrees.
In a large bowl, sift together the first six ingredients. If any ingredients remain in the sifter, press them through with a spatula. Sprinkle the butter squares over the flour mixture and using the fingertips, "rub" together until it resembles coarse meal.
In a small bowl, mix together the remaining three ingredients and add to the butter mixture. Stir the dough just until it clings together and all the ingredients are combined. Using a 1/4 cup measure, drop the dough onto a baking sheet.
Bake 15 minutes or until tops are golden brown. Serve warm or at room temperature.
Yield: 12-15 scones
